Steam generator and diffuser

An important element of the baking process, is the steam which is a key factor first in the development of the volume of the dough, followed by the shiny finish of the crust.
 

That is why all of our ovens are all well equipped with double or quadruple steam generators, according to the model, assuring you will obtain an optimal quality and quantity steam production, whatever your baking method may be.


In addition, a diffuser is attached to each generator to distribute the steam precisely and homogeneously.

 

Our approach, apart of our autonomous and independent steam generators, preserves the oven’s elements lifespan (heating elements, turbines, etc ...) by not splashing water at them.
 

Heat exchanger - Ultra High Efficiency

The heat exchanger is simply the heart of our ovens running on gas or oil.


The design of our exchangers, which is the result of + 50 years of research and development, ensures homogeneous baking of all varieties of breads, pastries and / or Viennoiseries.

The successful construction of the 3 mm refractory stainless steel guarantees perfect resistance to the important constraints resulting from the heating, and from the flame of the burner.


The unique "U" shape of our heat exchanger and the chicanes fins significantly slow down the hot air flow, maximizing the heat transmission time into the baking chamber.

 

The flue gas outlet temperature is therefore extremely low: For baking at 250°C, the flue gas temperature is below 150°C!

This Ultra High Energy Efficiency is synonymous to significant energy costs savings, and also minimizes carbon emission to the planet.
